- 120g dried Puy lentils
- 120g white long grain rice
- 2 small celeriac, peeled and cut into small cubes
- 2 garlic bulbs, split in half
- 150 ml rapeseed oil or extra virgin olive oil
- 4 onions, finely chopped
- 120g macaroni
- 2 tbsp pine nuts
- 1 tsp ground cinnamon
- 1 tsp cumin seeds
- 1 tsp coriander seeds
- 400 ml vegetable broth
- 2 tbsp dried cranberries
- 1 lemon, zested and juiced
- 2 tbsp rose harissa
- 120g Greek yogurt
- a handful of coriander leaves
- Preheat the oven to 180°C/160°C fan/gas 4.
- Rinse the lentils and rice together under cold water until the water runs clear.
- Soak in water for 30 minutes, then drain.
- In the meantime, toss the celery and garlic halves in 4 tablespoons of rapeseed oil and season.
- Cover with foil and roast for 20 minutes, turning occasionally.
- Remove the foil and place the cake in the oven for 10 minutes until soft and caramelized.
- Heat 4 tablespoons of oil over medium heat, season and fry the onions for about 12 minutes until they begin to caramelize.
- In the meantime, cook the macaroni until al dente and drain.
- Add the macaroni to the onions along with the pine nuts, fry until the nuts and noodles start to brown, then remove from the heat.
- Heat the remaining 2 tablespoons oil in a heavy-bottomed frying pan and add the ground cinnamon, cumin and coriander seeds.
- Stir until sizzling, then add the lentils and rice.
- Stir-fry for 1 minute, then add the stock and cranberries.
- Cook, stirring occasionally, until the broth is absorbed and the cranberries are swollen, about 25 minutes.
- Add the lentil mixture to the onion mixture along with the celeriac and cook over medium heat to warm through.
- Squeeze the roasted garlic cloves out of the peel, mash them with the lemon zest and juice, then stir them into the rice.
- In a separate container, stir the harissa into the yogurt.
- To serve, divide the koshari into bowls and top with spiced yoghurt and coriander.
