  • 50g walnut halves or pieces
  • 250g pack of pre-cooked Puy lentils
  • 1 large fennel bulb, finely chopped, setting the fronds aside
  • 140g cherries, halved and pitted (or small figs, halved)
  • 1 tbsp red wine vinegar
  • 2 tbsp extra virgin olive oil
  • 1 teaspoon Dijon mustard
  • ½ tsp clear honey
  • ½ small package tarragon, roughly chopped
  • 100g pack of soft goat cheese (any variety will work, but rolled with ash looks a little more special), cut into thick slices and halved

Preparation steps

  2. Add the walnuts and cook, stirring frequently, until they smell toasted and the shells are deep golden brown, 3 minutes.
  3. Set the walnuts aside to cool.
  4. Heat the lentils according to package instructions.
