- 175g plain flour
- 175g self-raising flour
- 175g cold butter, cut into cubes
- 1 teaspoon Baking powder
- 120g powdered sugar
- 175g mixed dried fruits
- 1 tsp cinnamon
- ½ tsp nutmeg
- 1 orange, peeled
- 1 lemon, grated zest
- 2 eggs, beaten
- 1-2 tbsp milk
- 18 blanched almonds
- 6 glazed cherries, halved
- Preheat the oven to 180°C/160°C fan/gas 4.
- Line a large baking tray with baking paper.
- Combine flour and butter in a food processor and pulse until mixture resembles fine breadcrumbs. Alternatively, you can rub the butter into the flour by hand.
- Place the mixture in a large bowl and add baking powder, sugar, mixed dried fruit, cinnamon, nutmeg, orange and lemon zest and a pinch of salt. Stir well to combine.
- Add all but 1½ tablespoons beaten egg to the mixture and stir until completely combined. If the dough is too dry, add 1-2 tablespoons of milk to moisten it.
- Form the dough into a ball, similar to scone dough.
- Divide the dough into 6 equal pieces and shape each piece into a thick disk about 3-4cm thick.
- Place the dough disks on the prepared baking sheet.
- Brush the tops of the dough disks with the remaining beaten egg.
- On each slice, place 2 pieces of cherries that resemble eyes. Then arrange three blanched almonds horizontally about an inch below the cherries, making them look like a mouth.
- Bake in the preheated oven for 15-20 minutes or until the fat pieces are cooked through. You can check if they are done by tapping the bottom – they should sound hollow.
