Ingredients

  • 1 x pack of fish pie mix (cod, salmon, smoked haddock etc., weight approx. 320-400g depending on pack size)
  • 3 spring onions, finely chopped
  • 100 ml milk
  • 450 g potatoes, peeled, large potatoes cut in half
  • 75g frozen sweetcorn, thawed
  • a handful of grated cheddar cheese
  • 1 large egg, beaten
  • flour, for dusting
  • Olive oil, for frying

Preparation steps

  1. Cook the potatoes in boiling water until just tender. Drain well and return to the pan over low heat. Heat for another minute or two to evaporate excess liquid. Mash the potato with a small piece of butter. Let cool down.
  2. Place the fish spring onions and milk in a shallow bowl, cover with cling film and microwave for 1 ½ – 2 minutes until cooked through. If you don’t have a microwave, put everything in a pot and cook gently until just opaque and cooked through.
  3. Drain the fish and spring onions through a fine sieve. Gently mix the potatoes into the potatoes, avoiding over-shredding the fish. Also add the sweetcorn, cheddar cheese and a generous grind of black pepper. Form into 6 – 8 patties. The cooler the mashed potatoes are, the easier it is to form the patties, as the mixture is very soft when warm.
  4. Pour the egg onto one plate and sprinkle flour on the other. Dip the patties first in egg and then in flour and arrange on baking paper on a tray. If the patties feel very soft, place the patties in the refrigerator for at least half an hour to firm up. At this point you can freeze the individually wrapped patties. Thoroughly thaw it before moving on to the next stage.
  5. Heat a large frying pan with a generous drizzle of olive oil. Once the oil is hot, carefully place the fish cakes in the pan. Bake for 5-7 minutes until the bottom is golden brown, then carefully flip over. Cook for another 5-7 minutes until the bottom is golden brown and heated through.
