Ingredients

  • 1 kg Maris Piper potatoes, peeled and halved

  • Splash of milk
  • 25g butter
  • 25g flour
  • 4 spring onions, finely chopped
  • 400 ml milk
  • 1 x pack of fish pie mix (cod, salmon, smoked haddock etc., weight approx. 320-400g depending on pack size)
  • 1 teaspoon Dijon or English mustard
  • ½ 25g package or a small bunch of chives, finely chopped
  • a handful of frozen sweet corn
  • a handful of frozen petits pois
  • a handful of grated cheddar

Make sure there are no bones in the fish. Smoked fish adds a lot of flavor to the dish. Preparation steps

  1. Preheat the oven to 200°C/180 fan/gas mark 6.
  2. Place the potatoes in a pot and pour enough water over them to cover them.
  3. Bring the potatoes to a boil and then simmer until tender.

  16. Sprinkle cheddar cheese over the mashed potatoes.
  17. Place the dish or ramekins in the oven for 20-25 minutes, until golden brown and bubbling around the edges.
  18. Alternatively, you can cover the cake or mini cakes and freeze them for another time.
