  • 500g new potatoes
  • 350g runner beans
  • a bunch of spring onions
  • 240 g sunscreen or dried tomatoes, drained
  • 200g Cheshire/Lancashire cheese
  • A good handful of fresh mint leaves (a 15g supermarket pack will do), coarsely chopped
  • 4-5 tbsp honey mustard dressing

Preparation steps

  1. Slice the potatoes and cook in a large pot of boiling salted water for 7 minutes.
  2. While the potatoes are cooking, clean the runner beans, cut them into diagonal slices and chop the spring onions.
  3. Add the beans to the pan and cook for another 7-9 minutes, until the potatoes and beans are just tender.
  4. Drain the vegetables and run them under cold water to stop the cooking process.
  5. Shake the colander to remove excess water and place the vegetables in a large bowl.
  6. Add onions and tomatoes to the bowl.
  7. Crumble in the cheese and mix well.
  8. Add most of the mint and dressing to the bowl and mix everything together lightly.
  9. Transfer the salad to a serving platter.
  10. Drizzle with a little more dressing.
  11. Sprinkle the remaining mint on top.
