Ingredients
- 2 eggplants, cut lengthwise into thick slices
- 2 tablespoons vegetable oil, plus a little oil for brushing
- 3 slices of black or white bread, crust removed
- 300g can of hummus
- 100g walnuts, roasted
- half an 80g pack of flat-leaf parsley, leaves coarsely chopped
- 200g pack of cherry tomatoes, quartered
- Juice ½ lemon
- Drizzle extra virgin olive oil
Preparation steps
- Place the eggplant in a single layer on a large baking sheet.
- Brush the eggplant slices sparingly with vegetable oil.
- Season the eggplant slices generously with salt and pepper.
- Grill the eggplant slices for 15 minutes, turning twice and brushing with oil, until soft and cooked through.
- Grind the bread into crumbs using a blender or food processor.
- Add 2 teaspoons of oil to the breadcrumbs and stir again briefly until everything is coated.
- Spread a few teaspoons of hummus on each eggplant slice.
- Place the breadcrumbs on a large plate.
- Press the hummus side of the eggplant into the breadcrumbs to coat.
- Grill the eggplants again, crumb side up, until golden brown, about 3 minutes.
- Place walnuts, parsley and cherry tomatoes in a bowl.
- Season the salad with salt and pepper.
- Add lemon juice and olive oil to the salad and mix again.
- Serve the grilled pieces with the salad, a dollop of hummus and some pita bread.
