Eggnog trifle

Ingredients

  • 375g powdered sugar
  • 3 large eggs, separated
  • 3 tbsp cornstarch
  • 800 ml cream
  • 250 ml whole milk
  • 165 ml brandy, marsala or sherry (or a mixture)
  • 1 vanilla bean
  • 35-40 cream-filled profiteroles (without chocolate) – store-bought or homemade (see Pairings)
  • 1 large orange, peeled, plus 1 tablespoon juice
  • 50g crispy amaretti cookies
  • 4 medium clementines, peeled and sliced ​​thickly

Preparation steps

  1. Mix 150 g sugar, egg yolk and cornstarch in a bowl until the mixture is light and smooth.
  2. Pour 300ml cream, milk and 65ml alcohol into a saucepan.
  3. Cut open the vanilla pod, scrape out the pulp and add it to the cream along with the pod.
  4. Heat the mixture until steaming but not boiling.
  5. Pour the hot liquid onto the yolks, stirring constantly.
  6. Strain the liquid through a sieve into a clean saucepan, discarding the vanilla bean.
  7. Return the pot to a low-medium heat and stir until very thick, about 10 minutes.
  8. Pour the vanilla pudding into a jug and cover with cling film directly on the surface.
  9. Chill the vanilla pudding for an hour and a half.
  10. Arrange half of the profiteroles in the bottom of a 2-quart trifle bowl.
  11. Pour 2 tablespoons of the remaining alcohol over the profiteroles along with the orange juice.
  12. Sprinkle cookies over the profiteroles.
  13. Drizzle the chilled vanilla pudding over the profiterole base.
  14. Spread the remaining profiteroles over the custard, working the edges first and then filling the middle.
  15. Arrange the clementine slices around the edge of the bowl and tuck them around the profiteroles.
  16. Mix the remaining alcohol, 500 ml cream, 50 g sugar and orange peel until soft peaks form.
  17. Spread the mixture over the profiteroles up to the edge of the bowl.
  18. Return the trifle to the refrigerator until ready to serve (can be made a day in advance at this point).
  19. To make the meringue, place the egg whites, the remaining 175g sugar, 1 tablespoon water and a pinch of salt in a heatproof bowl over boiling water.
  20. Whisk until a thick mixture forms and a clear trace of the beaters remains.
  21. Remove the bowl from the heat and continue beating for another 3 minutes, until the mixture has cooled slightly and is very stiff.
  22. Pour the meringue onto the trifle and use the back of a spoon to form peaks and hollows.
  23. Use a blowtorch to burn the meringue if you have one (though don’t hold it too close to the bowl if it’s made of delicate glass!).
  24. Best served immediately, but will keep for a day in the fridge.
