- 1 large orange, peeled, plus 1 tablespoon juice
- 50g crispy amaretti cookies
- 4 medium clementines, peeled and sliced thickly
- Mix 150 g sugar, egg yolk and cornstarch in a bowl until the mixture is light and smooth.
- Pour 300ml cream, milk and 65ml alcohol into a saucepan.
- Cut open the vanilla pod, scrape out the pulp and add it to the cream along with the pod.
- Heat the mixture until steaming but not boiling.
- Pour the hot liquid onto the yolks, stirring constantly.
- Strain the liquid through a sieve into a clean saucepan, discarding the vanilla bean.
- Return the pot to a low-medium heat and stir until very thick, about 10 minutes.
- Pour the vanilla pudding into a jug and cover with cling film directly on the surface.
- Chill the vanilla pudding for an hour and a half.
- Arrange half of the profiteroles in the bottom of a 2-quart trifle bowl.
- Pour 2 tablespoons of the remaining alcohol over the profiteroles along with the orange juice.
- Sprinkle cookies over the profiteroles.
- Drizzle the chilled vanilla pudding over the profiterole base.
- Spread the remaining profiteroles over the custard, working the edges first and then filling the middle.
- Arrange the clementine slices around the edge of the bowl and tuck them around the profiteroles.
- Mix the remaining alcohol, 500 ml cream, 50 g sugar and orange peel until soft peaks form.
- Spread the mixture over the profiteroles up to the edge of the bowl.
- Return the trifle to the refrigerator until ready to serve (can be made a day in advance at this point).
- To make the meringue, place the egg whites, the remaining 175g sugar, 1 tablespoon water and a pinch of salt in a heatproof bowl over boiling water.
- Whisk until a thick mixture forms and a clear trace of the beaters remains.
- Remove the bowl from the heat and continue beating for another 3 minutes, until the mixture has cooled slightly and is very stiff.
- Pour the meringue onto the trifle and use the back of a spoon to form peaks and hollows.
- Use a blowtorch to burn the meringue if you have one (though don’t hold it too close to the bowl if it’s made of delicate glass!).
- Best served immediately, but will keep for a day in the fridge.
