  • 200g white chocolate, finely chopped
  • 85g lightly salted butter, cut into small cubes
  • 100g plain flour
  • 3 medium eggs, beaten
  • 2 overripe bananas
  • 100g golden powdered sugar
  • 1 tbsp lemon juice
  • 4 tbsp pudding powder
  • 300 ml milk
  • 150 ml double cream
  • 2 tsp vanilla bean paste (we like this for the seeds, but can also use extract if you prefer)

Preparation steps

  1. Put the butter in a saucepan with 225 ml of water.
  2. Weigh the flour in a large bowl and set aside.
  3. Bring butter and water to the boil quickly with a pinch of salt.
  4. Simmer until the butter has melted.
  5. Add the flour and stir with a wooden spoon until the mixture is free of lumps.
  6. Pour the mixture into a bowl, spread it around the sides and let it cool for 10 minutes.
  7. Preheat the oven to 200°C/180°C fan/gas 6.
  8. Cut 2 pieces of baking paper to fit 2 baking sheets.
  9. Mark 12 lines about 9cm long on each piece of parchment.
  10. Turn the parchment over.
  11. Fit a piping bag with a large round piping tip.
  12. Gradually add the egg to the cooled mixture, beating well between each addition.
  13. Fill the smooth dough into the piping bag.
  14. Use some of the mixture to adhere the parchment to the trays.
  15. Pipe the choux pastry onto the baking sheets, following the marked lines.
  16. Bake for 30 minutes or until dough is golden brown and puffed.
  17. Swap sheets for the last 5 minutes.
  18. Allow to cool completely.
  19. Make the banana pudding by combining bananas, sugar and lemon juice in a food processor.
  20. Pour into a pot and simmer until the mixture has thickened.
  21. Mix the pudding powder with a little milk to form a smooth paste.
  22. Add the remaining milk, cream and vanilla to the paste and mix well.
  23. Pour the custard mixture into the banana puree and cook until thick and smooth.
  24. Pour into a bowl, cover with plastic wrap and chill for 2 hours or until cold.
  25. Place banana chips on a parchment-lined tray.
  26. Spray with edible gold spray or cover with gold leaf.
  27. Divide each eclair down one side.
  28. Pour the vanilla pudding into a disposable piping bag and fill the eclairs.
  29. Melt chocolate in a bowl in the microwave.
  30. Dip the top of each eclair in the chocolate.
  31. Place a golden banana chip on each eclair and let set for 30 minutes.
  32. Serve within 3 hours.
