  • 250g pack of butter, softened, plus a little butter for greasing
  • 250g soft light brown sugar
  • 2 tsp vanilla extract
  • 4 large eggs
  • 100g plain flour
  • 250g self-raising flour
  • 100g buttermilk
  • 2 eating apples, peeled, cored and diced into approximately 1cm pieces
  • 1 tsp ground cinnamon
  • 1 tsp spice mix
  • ¼ tsp ground cloves
  • Zest 1 lemon
  • 2 tbsp melted butter
  • 2 tbsp soft light brown sugar
  • 85g currants
  • 85g raisins
  • 50g mixed peel
  • 85g powdered sugar, sifted
  • Zest and squeeze 1 lemon
  • a few sugar cubes, coarsely crushed

Preparation steps

  1. Preheat the oven to 160°C/140°C fan/gas 3.
  2. Grease a 20 cm deep cake tin and line it with baking paper.
  3. Mix the ingredients for the filling and set aside.
  4. Place butter, sugar and vanilla in a bowl and mix until light.
  5. Stir in the eggs, then fold in the flour, buttermilk and apples.
  6. Pour half of the mixture into the mold.

  9. Bake for 1 hour and 25 minutes or until a skewer inserted comes out clean.
  10. Let cool in the tin.
  11. Mix the powdered sugar with enough lemon juice to create a liquid glaze.
  12. Remove the cake from the mold and drizzle with the icing.
  13. Sprinkle with crushed sugar cubes and lemon zest.
