Ingredients
- 8 chicken thighs, with skin on
- 800g potatoes, cut into pieces
- 1 garlic bulb, broken into cloves, leaving the peel on
- 2 tbsp olive oil
- 200 ml chicken broth
- 1 lemon, halved
- 2 zucchini, cut into thick slices
- 1 red chili pepper, deseeded and sliced
- large handful of basil leaves, torn
Preparation steps
- Preheat oven to 220°C/200°C fan/gas 7.
- Place the chicken, skin side up, in a large roasting pan along with the potatoes.
- Lightly crush the garlic cloves and distribute between the chicken pieces.
- Drizzle olive oil and chicken broth over it and season.
- Squeeze the juice out of the lemon and put the empty halves into the mold.
- Bake for 45-50 minutes, adding zucchini and chili 15 minutes before the end of the cooking time.
- Remove from the oven when the chicken is cooked through and golden brown and the vegetables are tender.
- Stir in the basil leaves and serve.
