Dough know-how
Allowing the dough to rest after mixing the liquid with the dry dough will significantly reduce the time it takes to knead.

Preparation steps

  1. Mix the flour in a bowl with 2 teaspoons of salt and the yeast.
  2. Make a well, add water and oil and mix everything into a rough dough.
  3. Let it sit like this for 5 minutes.
  4. Flour your work surface and your hands, then knead the dough for 1-2 minutes until smooth and elastic.
  5. Let it rest in a warm place, covered with oiled cling film, for 10 minutes. Don’t wait for it to double in size.
  6. Cut the dough into 8 even pieces and roll each into a thin circle.
  7. Place 1 teaspoon of mango chutney in the center of the circle, then fold one side over to create a semicircle shape.
  8. Pinch the edges together.
  9. Heat the grill to high.
  10. Dust a baking sheet with flour, then grill the loaves for 1 1/2 to 2 minutes on each side, until puffed and golden brown.
