Easy Chicken Gumbo

  • 2 tbsp olive oil
  • 200 g smoked bacon bacon
  • 1 onion, sliced
  • 130g pack Padrón peppers, stems removed, sliced ​​(or 1 green chilli and 100g green pepper)
  • 4 skinless chicken breasts, cut into bite-sized pieces
  • 3 tbsp flour
  • 1 tbsp Cajun spice mix
  • 3 cloves of garlic, crushed
  • 500 ml chicken broth
  • 175g package okra, sliced ​​(or 2 zucchini, sliced)
  • 500g cardboard passata
  • 2 spring onions, sliced
  • cooked rice and black beans for serving

Preparation steps

  1. Heat the oil in a large pan.
  2. Add the bacon and onion and fry for 5 minutes until the bacon is crispy and the onion is soft.
  3. Add the peppers, chicken and flour and fry for another 5 minutes until the chicken is golden brown and the flour begins to turn a biscuit color.
  4. Stir in Cajun spice mix and garlic.
  5. Slowly add the chicken broth, stirring constantly.
  6. Add okra, passata and some spice.
  7. Simmer uncovered over medium heat for 20 minutes.
  8. Stir frequently while cooking to loosen the flour from the bottom of the pan.
  9. Scatter the spring onions on top.
  10. Serve with rice and black beans.
