  • small handful of fresh thyme
  • 1 teaspoon black peppercorns

  • 1 large meaty duck breast (approx. 250 g)

Preparation steps

  8. Cover the duck with the remaining salt mixture.
  9. Cover the container tightly with cling film or a lid.
  10. Leave the container in the refrigerator for 3 days.
  11. After 3 days, remove the duck from the mixture.
  12. Rinse the duck under cold water.
  13. Dry the duck well with kitchen paper.
  14. The ham can now be cut into thin slices and served plain or in a salad.
  15. Wrap the remaining ham in cling film.
  16. Store the wrapped ham in the refrigerator for up to 1 month.
