Ingredients

  • 300 ml milk
  • 400g strong white bread flour, plus some flour for dusting
  • 50g cocoa powder
  • 7 g bag of fast-acting dry yeast
  • 50g golden powdered sugar
  • 1 tsp ground cinnamon
  • 1 large egg, beaten
  • 1 tsp vanilla extract
  • 100g raisins
  • 100g milk chocolate chips
  • 50g white chocolate
  • 2 Table spoons of milk
  • 50g plain flour

Preparation steps

  1. Warm 275ml milk in a small pan or in the microwave for a few minutes.
  2. In a large mixing bowl, combine flour, cocoa, yeast, sugar and cinnamon.
  3. In a separate bowl, mix the egg and vanilla extract with the warm milk.
  4. Add the liquid mixture to the dry ingredients and stir into a soft dough.
  5. Knead the dough on a clean work surface for 10 minutes until smooth and elastic.
  6. Return the dough to the mixing bowl, cover with oiled plastic wrap, and let rise until doubled in size, about an hour.
  7. Remove the dough from the bowl and knead in the raisins and chocolate chips.
  8. Line a large baking tray with baking paper.
  9. Divide the dough into 12 equal pieces and shape each into a smooth ball.
  10. Arrange the balls in a 4×3 formation on the prepared baking sheet, leaving room for them to rise.
  11. Score a cross on the top of each bun.
  12. Cover the rolls loosely with oiled cling film and let them rise until they have almost doubled in size.
  13. Preheat the oven to 190°C/170°C fan/gas 5.
  14. In a small pan or microwave, melt the white chocolate with the milk.
  15. Stir in flour, 1 tablespoon at a time, until a smooth paste forms.
  16. Place the paste in a disposable piping bag or grocery bag and cut off the tip of the corner.
  17. Glaze the rolls with the remaining milk.
  18. Bake the rolls for 15 minutes.
  19. Pipe crosses onto the rolls where the dough was scored.
  20. Bake for another 5 minutes.
  21. Cool the rolls on a wire rack before serving.
