- 85g hot melted butter, plus some butter for greasing
- 14 dark chocolate digestifs, finely crushed
- 3 x 300g packs full fat Philadelphia cheese, at room temperature
- 200g golden powdered sugar
- 4 tbsp cocoa, sifted
- 2 tsp vanilla extract
- 3 tbsp Tia Maria
- 3 large eggs
- 284 ml pot of sour cream
- 100g bar of dark coffee chocolate, melted (we used Lindt Excellence Coffee Intense)
- 2-3 tbsp milk
- 284 ml pot of double cream
- Chocolate rolls to decorate (optional, see tip below)
Making chocolate curls
Take a large block of chocolate and run a rotating potato peeler firmly across the smooth back of the block, forming curls
Remove chocolate flakes from the bar.
- Preheat the oven to 180°C/fan 160°C/gas 4.
- Line the bottom of a 25cm springform pan with baking paper.
- Mix the melted butter and biscuit crumbs well and then press firmly into the bottom of the tin.
- Bake for 10 minutes.
- Set the oven temperature to 240°C/fan 220°C/gas 9.
- Beat cream cheese and sugar with an electric whisk until smooth and creamy, then stir in cocoa, vanilla, Tia Maria, eggs, sour cream and half of the melted chocolate.
- Stir enough milk into the remaining chocolate to create a sauce consistency, then set aside until you’re ready to decorate the cheesecake.
- Put some melted butter on some kitchen paper and brush it around the edge of the cake tin.
- Pour in the cheese mixture and smooth the surface.
- Bake for 10 minutes, then reduce the heat to 110°C/fan 90°C/gas ¼ for 25-30 minutes.
- The filling should be firm but wobbly in the middle.
- Turn off the oven, open the door slightly, then let the cheesecake cool in the oven for 2 hours.
- Refrigerate until serving.
- To decorate the cheesecake, carefully remove it from the tin and peel off the baking paper from the bottom.
- Lightly whip the cream until it just holds its shape, then swirl it over and drizzle with the reserved chocolate sauce, using the tip of a spoon to spread the sauce through the cream.
- Serve as is or pile with chocolate rolls if you made them.
