  • 175 ml sunflower oil

  • 175g powdered sugar

Preparation steps

  1. Preheat the oven to 180°C/gas 4/fan 160°C.
  2. Oil the bottom and sides of an 18cm square cake tin and line with baking paper.
  3. Cut two long strips of baking paper the width of the tin and place each strip crosswise so that the bottom and sides of the tin are covered with a double layer of bottom.
  4. Place the oil in a large mixing bowl and add the sugar and eggs. Mix lightly with a wooden spoon.
  5. Stir in the grated carrots, raisins and orange peel.
  6. In a separate bowl, combine the flour, baking soda and spices and then sift into the mixing bowl with the other ingredients. Mix lightly until evenly combined.
  7. The mixture will be quite soft and almost liquid.
  8. Pour the mixture into the prepared pan and bake for 40-45 minutes or until the cake feels firm and springy when pressed in the center.
  9. Let the cake cool in the tin for 5 minutes, then turn it out onto a wire rack and peel off the baking paper.
  10. Allow the cake to cool completely on the wire rack. You can also freeze the cake at this point.
  11. In a small bowl, stir together the glaze ingredients until smooth. The icing should be about as liquid as cream.
  12. Place the cake on a serving plate and drizzle the glaze over the top in diagonal lines back and forth, allowing it to drip down the sides.
