  • 225g cold butter, chopped
  • 350g plain flour
  • 100g powdered sugar, plus a little sugar for dusting
  • 410g jar of minced meat

  2. Rub the butter into the flour and powdered sugar with your fingertips, or pulse in a food processor until the mixture forms a ball – no need to add liquid or let cool. Knead briefly, then cut into 12 equal pieces.
  3. Working one piece of dough at a time, cut off two-thirds and press into the bottom and sides of a muffin tin hole. Repeat to get 12.
  4. Put the minced meat into the pastry cases – it doesn’t fill them completely.
  5. Now take the remaining 12 smaller pieces of dough. Roll each piece into a ball and flatten to form a disk for the mince pie top. Add one to each cake and fold the dough coming up the sides of the pan down to seal. Prick the tops several times with a fork. Can be frozen for up to 6 weeks. Defrost before baking.
  6. Bake for 12-15 minutes or until pale golden.
  7. Let the cakes cool in the pans for about 10 minutes, then rotate them slightly to prevent them from sticking.
  8. Once cooled, carefully remove from the molds.
  9. Dust with powdered sugar to serve.
