  • 4 tbsp butter
  • 1 Granny Smith apple, cored, peeled and diced
  • 4 slices of black pudding
  • 2 tsp whole grain mustard
  • 1 tsp honey
  • 1 ½ tbsp sherry vinegar
  • Vegetable oil, for deep frying
  • 200 g Brussels sprouts, cleaned and halved
  • a handful of watercress

  9. Cook the mixture for 30 seconds.
  10. Season to taste and set aside over very low heat to keep warm.
  11. Heat the oil in a large, heavy-bottomed pot until the thermometer registers 190°C.
  12. Alternatively, a piece of bread will brown within 15 seconds.
  13. Gently add the sprouts and cook until deep golden brown, 3 minutes.
  14. Drain the sprouts on kitchen paper.
  15. Sprinkle the sprouts with sea salt flakes.
  16. Divide the sprouts between two plates.
  17. Place watercress, apple and black pudding on the plates.
  18. Drizzle the warm dressing over the ingredients.
