Ingredients

  • 1.3 kg Seville oranges
  • 2 lemons, juice only
  • 2¼kg granulated or preserving sugar
  • 450g dark muscovado sugar
  • 150 ml whiskey

Replace whiskey with Grand Marnier, Drambuie or Cointreau. Instead of muscovado sugar, use 5 pounds of granulated or preserving sugar and add 2 tablespoons black treacle (add 1 tablespoon per serving). This will make the jam darker.

Preparation steps

  1. Place the whole oranges and lemon juice in a large preserving pot and cover with 2 liters of water. If this isn’t enough to cover the fruit, transfer it to a smaller pan. If necessary, weigh down the oranges with a heatproof plate to keep them submerged.
  2. Bring to a boil, cover, and simmer very gently for about 2 hours, or until the shell can be easily pierced with a fork.
  3. Heat half of the white and dark sugar in a very low oven.
  4. Pour the cooking water from the oranges into a jug and place the oranges in a bowl.
  5. Return the cooking liquid to the pan.
  6. Allow the oranges to cool until they are easy to handle, then cut them in half.
  7. Remove any seeds and pulp and add them to the reserved orange liquid in the pan.
  8. Bring to the boil for 6 minutes, then strain the liquid through a sieve into a bowl, pressing the pulp through with a wooden spoon; The result is a high pectin content, which ensures that the jam holds well.
  9. Pour half of this liquid into a preserving pot.
  10. Cut the peel into rough pieces with a sharp knife.
  11. Add half of the bowl of warm white and dark muscovado sugar to the liquid in the canning pot.
  12. Stir over low heat until all the sugar is dissolved, then bring to the boil and bubble rapidly for 15-25 minutes until it reaches setting point.
  13. Stir in half of the whiskey.
  14. Remove the pan from the heat and remove any foam from the surface.
  15. (To dissolve excess foam, add a small piece of butter to the surface and stir gently.)
  16. Let the jam sit in the pan for 20 minutes to allow it to cool slightly and the peel to settle. Then fill into sterilized jars, close and label.
  17. Repeat the process for the remaining batch.
