  • 2 tbsp vegetable oil
  • 1 teaspoon mild curry powder
  • 1½ kg chicken, ready to fry
  • 3 slices smoked streaky bacon, cut into small pieces
  • 250g frozen peas, thawed
  • 400g fresh peas, shelled (approximately 2kg weight without shell)
  • 1 shallot, finely chopped
  • 10 stalks of marjoram or oregano, leaves picked and chopped

Preparation steps

  1. Preheat the oven to 200°C/180°C fan/gas 6.
  2. Mix the oil with the curry powder.

  4. Transfer the chicken to a roasting pan.
  5. Cook the chicken in the oven for 1 hour and 30 minutes.
  6. Insert a skewer between the thigh and breast of the chicken to check for doneness.
  7. The juice should be clear.
  8. Remove the chicken from the oven and cover loosely with foil.
  9. Let the chicken rest for 20 minutes.
  10. In the meantime, fry the bacon in a dry, non-stick pan until crispy.
  11. Remove the bacon from the pan and let it cool slightly.
  12. Grind the peas separately in a blender or use a hand blender to make a coarse puree.
  13. Mix the pureed peas with bacon, shallot, marjoram, chives, a dash of olive oil and a pinch of ground ginger and season with salt.
  14. Serve the pea mixture with the chicken.
