Gently stir in the potatoes and peas, being careful not to mash them. Add lemon juice and coriander and let cool.
- Preheat the oven to 200°C/fan 180°C/gas. 6. Roll out the dough rectangle, place it on a floured surface with the long side facing you and roll it out a little more to make a square shape. Cut into 4 squares, then cut each in half to make 8 long rectangles. Place four of them on a baking tray, brush the edges with beaten egg and place a quarter of the filling in the middle of each. Place the remaining dough on top and pinch the edges together to form a sealed packet. Brush with more egg and then bake for 20 minutes, until golden brown and puffed up. If cooking from frozen, bake for 30 minutes.
