Ingredients

  • 300g potatoes, peeled and cut into small pieces

  • Juice ½ lemon
  • a handful of coriander, chopped
  • 375g package of ready-rolled puff pastry
  • 1 egg, beaten

Preparation steps

  1. Heat a large pot of water, add the potatoes, then cook until just tender, 8 minutes. Add the peas 1 minute before the end of the cooking time. Drain and then set aside.
  2. Meanwhile, heat the oil in a frying pan. Sauté the onion until soft and lightly colored. Add the curry paste and mustard seeds and fry for a few more minutes until the mixture is fragrant. Gently stir in the potatoes and peas, being careful not to mash them. Add lemon juice and coriander and let cool.
  3. Preheat the oven to 200°C/fan 180°C/gas. 6. Roll out the dough rectangle, place it on a floured surface with the long side facing you and roll it out a little more to make a square shape. Cut into 4 squares, then cut each in half to make 8 long rectangles. Place four of them on a baking tray, brush the edges with beaten egg and place a quarter of the filling in the middle of each. Place the remaining dough on top and pinch the edges together to form a sealed packet. Brush with more egg and then bake for 20 minutes, until golden brown and puffed up. If cooking from frozen, bake for 30 minutes.
  4. Serve with fresh green salad and a spoonful of chutney.
