Ingredients

  • 1 egg
  • 100g potato flour (see tip below)
  • 24 raw tiger prawns, deveined and tail removed
  • 700 ml peanut oil for frying
  • 2 tsp wasabi powder
  • 6 tbsp mayonnaise
  • 2 pinches of powdered sugar
  • 1 roasted red pepper from a jar, sliced
  • 5 tbsp sweet chili sauce
  • 1 tsp lime juice

Tip
If you can’t get potato flour, use half potato flour
flour and half cornstarch. I like potato flour
because it has a high starch content
the dough is particularly crispy. It doesn’t stay crispy for long
but long – so get on with everything
otherwise and fry these at the last minute.

Preparation steps

  1. To make the mayonnaise, mix the wasabi powder with 1 tablespoon of water to form a paste.
  2. Stir in mayonnaise and sugar, cover and chill.
  3. To make the chili dip, blend the peppers, sweet chili sauce and lime juice in a food processor or blender until smooth.
  4. Put aside.
  5. In a bowl, mix the egg and potato flour with 4 tablespoons of very cold water to form a dough.
  6. Stir in shrimp.
  7. Heat the oil in a deep pot until a piece of bread browns in it, about 15 seconds.
  8. Line a tray with kitchen paper.
  9. Remove the shrimp from the batter and fry them a little at a time until the batter is golden brown and the shrimp are pink.
  10. Remove to kitchen paper to drain and sprinkle with salt.
  11. Serve hot and dip in the dips.
