- 250 g sustainable white fish fillets such as cod, haddock or pollock
- 2 tbsp flour
- 1 egg, beaten
- 4 tbsp dried breadcrumbs (we used panko)
- 2 tbsp sesame seeds
- Vegetable oil, for frying
- 1 ripe avocado
- Juice 1 lime
- small packet of cilantro, chopped
- 2 tbsp light mayonnaise
- 2 burger buns, split and toasted
- Cut the fish into 4 large fingers.
- Put the flour in a bowl with some spices.
- Place the egg in another bowl.
- Place breadcrumbs and sesame seeds in a third bowl.
- Dust the fish sticks with flour.
- Dip the fish sticks into the egg.
- Coat the fish sticks with breadcrumbs.
- Chill the fish fingers for 10 minutes (optional).
- Heat a dash of oil in a frying pan.
- Fry the fish fingers for 3-4 minutes on each side until golden brown and cooked through.
- Add more oil if the pan looks too dry.
- Stone the avocado, peel it and cut it into slices.
- Squeeze the lime juice over the avocado to prevent it from browning.
- Mix the remaining lime juice and coriander into the mayonnaise.
- To serve, spread some mayonnaise on the bottom of each bun.
- Top with 2 fish sticks.
- Add a few avocado slices.
- Place the bun lid on top.
- Serve the remaining mayo as a side dish.
