  • 800g Jerusalem artichoke
  • 1 garlic bulb, cut in half
  • 1 tbsp rosemary leaves, chopped
  • 3 tbsp rapeseed oil
  • a pinch of ground mace
  • 20g butter
  • 2 tsp lemon juice
