Ingredients

  • 500g pack of ready-to-use polenta
  • 25g Parmesan, grated
  • 2 skinless, boneless chicken breast fillets
  • 250g pack of cherry tomatoes
  • Leaves from some rosemary branches, torn off
  • 1 garlic clove, sliced
  • 2 tbsp olive oil

Tip

Make it with potatoes
Use small pieces of unpeeled potatoes instead of polenta.

Preparation steps

  1. Preheat the oven to 220°C/fan 200°C/gas 7.
  2. Roughly break the polenta into small pieces with your fingers and spread them in the bottom of a small roasting tin.
  3. Add the Parmesan and mix.
  4. Place the chicken breast, cherry tomatoes, rosemary and garlic on the polenta.
  5. Drizzle with olive oil.
  6. Season to taste.
  7. Roast for 25 minutes, until the chicken skin is crispy and golden and the polenta and cheese are crispy around the edges.
  8. Serve with a green salad.
