  • 6 flatbreads
  • 200g pack of feta cheese
  • 20g package flat-leaf parsley or mint, leaves coarsely chopped
  • Raw vegetable food

Preparation steps

  1. Toast the pittas in a toaster until just barely cooked through – puffed up but not yet crispy – then let cool for a few minutes.
  2. Meanwhile, in a large bowl, mash the feta with a fork.
  3. Stir in herbs and plenty of black pepper.
  4. Cut a slit along one edge of each pitta, then add the feta.
  5. Spread the feta on the inside of the bread using the back of a spoon or a cutlery knife.
  6. The prepared pittas can be refrigerated and covered up to a day in advance.
  7. To serve, toast the pittas again in the toaster, cut side up, until the bread is just crispy.
  8. Let the pittas cool for 2 minutes before cutting them into wedges.
