Ingredients

  • 2kg floury potatoes (we used Maris Piper), cut into pieces
  • 200 g duck fat or goose fat (reserved from the confit turkey – see “goes with it” opposite)
  • flaky sea salt

Preparation steps

  1. On Christmas Eve, place the potatoes in a large pot and cover with cold salted water.
  2. Bring to a boil, reduce heat and cook until slightly tender, 2-3 minutes.
  3. Drain and shake well in the sieve.
  4. Place in a large baking tin lined with baking paper and leave uncovered in the fridge overnight.
  5. When your turkey crown goes in, add the duck fat to your largest roasting pan and heat in the oven.
  6. After 10 minutes, add your cold potatoes to the hot duck fat – you should hear them sizzle as they hit the dish.
  7. Distribute the fat in it and season well with sea salt flakes. Then spread them in a single layer to help them crisp up.
  8. Roast for about 1 hour and 30 minutes, turning a few times, until evenly browned.

Health benefits of crispy confit fried potatoes

Not only are crispy confit fried potatoes a delicious addition to any meal, but they also provide several health benefits. Made from floury potatoes and cooked in duck or goose fat, these fried potatoes are a delight for the palate and the body.

1. Nutrient-rich potatoes

The main ingredient for crispy confit fried potatoes is 2 kg of floury potatoes, such as Maris Piper. Potatoes are a great source of several essential nutrients including vitamin C, vitamin B6, potassium and fiber. Vitamin C is an antioxidant that boosts immune function, while vitamin B6 is important for brain development and function. Potassium is important for maintaining healthy blood pressure, and fiber aids digestion and promotes satiety.

2. Heart-healthy fats

The recipe calls for 200g of duck fat or goose fat, which may seem indulgent, but these fats offer some surprising health benefits. Duck and goose fat are rich in monounsaturated fats, which are known to improve heart health. These fats can help lower LDL cholesterol levels and increase HDL cholesterol levels, thereby reducing the risk of heart disease. In addition, they provide essential omega-3 fatty acids, which have anti-inflammatory effects and support brain health.

3. Flaked sea salt

A pinch of sea salt flakes enhances the flavor of crispy confit fried potatoes. While salt should be consumed in moderation, high-quality sea salt contains trace elements such as magnesium, calcium and potassium, which are important for various body functions. These minerals can support proper nerve and muscle function, maintain electrolyte balance, and promote strong bones.

Next time you treat yourself to a serving of crispy confit fried potatoes, remember that they not only satisfy your taste buds, but also provide valuable nutrients. Enjoy the deliciousness and reap the health benefits at the same time!
