  • 2kg floury potatoes (we used Maris Piper), cut into pieces
  • 200 g duck fat or goose fat (reserved from the confit turkey – see “goes with it” opposite)
  • flaky sea salt

Preparation steps

  1. On Christmas Eve, place the potatoes in a large pot and cover with cold salted water.
  2. Bring to a boil, reduce heat and cook until slightly tender, 2-3 minutes.
  3. Drain and shake well in the sieve.
  4. Place in a large baking tin lined with baking paper and leave uncovered in the fridge overnight.
  5. When your turkey crown goes in, add the duck fat to your largest roasting pan and heat in the oven.
  6. After 10 minutes, add your cold potatoes to the hot duck fat – you should hear them sizzle as they hit the dish.
  7. Distribute the fat in it and season well with sea salt flakes. Then spread them in a single layer to help them crisp up.
  8. Roast for about 1 hour and 30 minutes, turning a few times, until evenly browned.
  9. Serve immediately.

  4. Using a spatula or wooden spoon, gently turn the potatoes in the fat until they are well coated.
  5. Sprinkle with sea salt flakes.
  6. Roast in the preheated oven for 45-50 minutes, turning occasionally, until the potatoes are golden brown and crispy.
  7. Remove from oven and drain on paper towels to remove excess fat.
  8. Serve immediately as a delicious side dish.
