Creamy tomato risotto

Ingredients

  • 400 g chopped canned tomatoes
  • 1l vegetable broth
  • piece of butter
  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 2 cloves of garlic, finely chopped
  • 1 sprig of rosemary, finely chopped
  • 250g risotto rice
  • 300 g cherry tomatoes, halved
  • small packet of basil, roughly torn
  • 4 tbsp grated Parmesan

Preparation steps

  1. Place the chopped tomatoes and half of the stock in a food processor and puree until smooth.
  2. Pour into a saucepan with the remaining broth, bring to a gentle simmer and keep over low heat.
  3. Meanwhile, add butter and oil to the bottom of a large pot and heat gently until butter is melted.
  4. Add the onion and cook gently until softened, 6-8 minutes.
  5. Stir in garlic and rosemary and cook for 1 minute more.
  6. Add the rice and cook, stirring, for 1 minute.
  7. Add about a quarter each of the hot broth and the tomato mixture.
  8. Allow the risotto to cook, stirring frequently, adding more broth once absorbed.
  9. After adding half the broth, add the cherry tomatoes.
  10. After 20-25 minutes, the rice should be creamy and tender, the cherry tomatoes soft, and all of the stock used up.
  11. Cover and let rest for 1 minute, then stir in the basil.
  12. Serve sprinkled with Parmesan and a good pinch of black pepper.
