  • 50g pudding rice
  • 500ml carton of long-life vanilla flavored sweetened soy milk alternative (we used UHT Provamel Organic Vanilla)
  • 50 g ready-to-eat dried apricots, cut into small pieces
  • 1 tbsp golden powdered sugar
  • 250ml carton soy single cream alternative (we used UHT Provamel Soya Dream)
  • 8 tbsp apricot compote or 4 tbsp apricot jam
  • 1 tbsp peeled pistachios, chopped

Preparation steps

  1. Place rice and soy milk in a medium saucepan, stir and bring to a boil.
  2. Reduce the heat immediately, otherwise the soy will form bubbles and can easily boil over.
  3. Cover the pan halfway with a lid, then let the rice cook gently over a very low heat for 40-45 minutes, stirring occasionally, until the rice is puffy and very tender.
  4. The mixture should be thick and creamy.
  5. While the rice is cooking, mix the apricots, sugar and cream.
  6. Remove the rice from the heat, let it cool for 15 minutes and then stir in the apricot mixture.
  7. Pour into 4 small cups or glass bowls.
  8. Cover and chill in the refrigerator for 30 minutes (or longer if you have time).
  9. To serve, add two tablespoons of apricot compote or 1 tablespoon of jam to each dessert and sprinkle the pistachios on top.
