Ingredients

  • small handful of dried porcini mushrooms
  • 25g butter
  • 1 shallot, finely chopped
  • 2 garlic cloves, crushed
  • 5 sprigs of thyme, leaves picked
  • 500 g large field mushrooms, sliced
  • 200 g chestnut mushrooms, sliced
  • small glass of red wine
  • 125 ml vegetable broth
  • 100g Taleggio cheese (or vegetarian alternative), cut into slices
  • 500 ml milk
  • 1 bay leaf
  • 3 sprigs of thyme
  • 250g instant polenta
  • 50g butter
  • 75g Parmesan (or vegetarian alternative), grated

Preparation steps

  1. Soak the dried mushrooms in 150 ml of warm water. Let rest for 20 minutes, then drain and squeeze, reserving the soaking liquid.
  2. Heat the butter in a large frying pan. When it sizzles, add the shallot and cook for a few minutes until softened.
  3. Add the garlic and thyme leaves, cook for 1 minute more, then increase the heat and add the soaked mushrooms.
  4. After 1 minute, add all the other mushrooms and fry over very high heat for 5 minutes until soft.
  5. Add the red wine and cook quickly for 1 minute.
  6. Add the broth and remaining mushroom liquid and simmer for 15 minutes until a thickened stew forms. Turn off the heating.
  7. For the polenta, bring the milk to the boil with 500 ml of water, bay leaves and thyme.
  8. Turn off the heat and let it steep for 20 minutes, then fish out the herbs and bring to the boil again.
  9. Add the polenta in a steady stream, stirring evenly. Cook for 1 minute until thickened, then stir in butter and Parmesan.
  10. Place a crater of polenta on a baking tray and fill with the ragout.
  11. Top with Taleggio slices and place under a hot grill until melted and oozing.
