  • 120g butter, cut into cubes
  • 300g flour, plus some flour for dusting
  • good pinch of salt
  • 600g small floury potatoes, about the same size
  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 500g leek, cleaned and roughly chopped
  • 3 cloves of garlic, finely chopped
  • 3 tbsp chopped chives
  • 150 ml half-fat crème fraîche
  • 200g Lancashire cheese, grated
  • 200 g thinly sliced ​​ham (we used Italian cooked ham)
  • 1 medium egg, beaten

Preparation steps

  1. First prepare the dough.
    1. Put the butter in a bowl with the flour and salt.
    2. Rub the butter into the flour with your fingertips until the mixture resembles coarse breadcrumbs.
    3. Add about 6 tablespoons of water to the mixture and mix with a knife until a stiff dough forms.
    4. Divide the dough in half and form each into a flat disc.
    5. Wrap in cling film and place in the fridge while you make the filling.
  • Place the potatoes in a medium-sized pot and cover with water.
  • Bring to a boil and simmer until partially cooked, 5-7 minutes.
  • Drain well and let cool.
  • Heat the oil in a large pot.
  • Add the onion and leek and cook gently for 10-15 minutes until very tender. Be careful not to let them brown.
  • Add the garlic and cook for a few more minutes, then remove from the heat, place in a bowl and allow to cool.
  • Stir in the chives.
  • Preheat the oven to 180°C/160°C fan/gas 4.
  • Place a baking sheet in the oven to preheat.
  • Roll out 1 disk of dough on a lightly floured surface to a thickness of 5 mm.
  • Line a 24 cm wide and 4 cm deep cake tin so that any excess dough protrudes beyond the tin.
  • Prick the dough all over with a fork, place on the preheated baking tray and bake for 10-12 minutes.
  • Place the baking sheet back in the oven.
  • Cut the cooled potatoes into very thin slices.
  • Start assembling the tart by arranging half of the potatoes on the base, then topping with half of the leeks, half of the crème fraîche, and topping with half of the cheese.
  • Spread half of the ham on top and repeat with all remaining ingredients.
  • Roll out the remaining dough disc into a circle about 26 cm in size.
  • Brush the top edge of the dough in the mold with the beaten egg.
  • Place the dough circle on top and trim the edges, pressing with your fingertips or a fork to seal.
  • Brush everything with the beaten egg and decorate the surface with leftover puff pastry cut into sheets or a decoration of your choice.
  • Place on the hot baking tray on the lowest rack and bake until golden brown, 45 minutes.
  • Allow to cool in the tin for 15 minutes before transferring to a wire rack to cool.
  • Cut into wedges and serve.
