Ingredients
- 1 tbsp vegetable oil
- 2 onions, very finely chopped
- 2 tsp yellow mustard seeds
- 3 tbsp Madras curry paste
- 1kg (peeled weight) raw beetroot, peeled, halved and cut into thick slices
- 1 green chili pepper, halved lengthwise
- 400 g chopped canned tomatoes
- 3 tbsp ground almonds
- 4 tablespoons low-fat natural yogurt, plus some extra for serving
- Basmati rice for serving (optional)
