  • 500g strong white bread flour
  • 7 g packet of Easy-Bake dry yeast (or 2 tsp quick dry yeast)
  • 1½ tsp salt
  • 1 ½ tbsp powdered sugar
  • 1 tbsp softened butter
  • 100 g mixture of dried cranberries, raisins and chopped pecans
  • Pinch of ground cinnamon

Preparation steps

  1. Mix flour, yeast, salt and 1½ teaspoons powdered sugar in a large mixing bowl.
  2. Put the butter in the bowl and rub it into the flour.
  3. Make a dip in the middle of the flour and pour in almost 300 ml of lukewarm water.
  4. Using a round-bladed knife, stir in the water until the mixture forms a soft, not too sticky dough.
  5. Form the dough into a ball with your hands.
  6. Place the dough on a lightly floured surface and knead for 8-10 minutes until it feels smooth and elastic.
  7. Add only the minimal amount of additional flour if necessary to keep the dough from sticking together.
  8. Place the dough ball on a lightly floured work surface.
  9. Cover the dough with an inverted, clean, large glass bowl and let stand for 45 minutes to 1 hour, or until doubled in size.
  10. The timing depends on the warmth of the room.
  11. Punch down the dough by gently kneading it 3-4 times to remove any large air bubbles.
  12. Form the dough into a ball, then cover and let rest for 10 minutes.
  13. Flatten the dough into a rectangle about 28 x 18 cm in size.
  14. Scatter cranberries, raisins and chopped pecans over the dough.
  15. Roll up the dough tightly from one of the short ends to create a 52cm long sausage.
  16. Tie the dough into a simple knot and place it on a baking sheet lined with baking paper.
  17. Cover the dough and let it rest for 40-45 minutes, or until it has doubled in size.
  18. 20 minutes before baking, place a roasting tin in the bottom of the oven and preheat the oven to 230°C/210°C fan/Gas 8.
  19. Carefully pour about 250ml of cold water into the roasting tin.
  20. Place the risen bread in the oven and reduce the heat to 220°C/200°C fan/gas mark 7.
  21. Bake for 20 minutes or until golden brown.
  22. Remove the bread from the oven and let it cool on a wire rack.
  23. While the bread is still warm, make a spiced sugar glaze using the remaining powdered sugar, cinnamon and 1 teaspoon hot water.
  24. Spread the glaze over the bread.
