  • 4 large egg whites
  • 1 tsp lemon juice
  • 200g white powdered sugar
  • a handful of flaked almonds
  • Powdered sugar, for dusting
  • 300g pack of frozen cranberries
  • Use 250 ml fresh pomegranate juice (not a pomegranate juice drink) or orange juice
  • 100g white powdered sugar, plus 1-2 tbsp to taste (optional)
  • ¼ tsp ground cinnamon
  • ¼ teaspoon arrowroot mixed with 1 teaspoon cold water
  • 3 tablespoons powdered sugar, sifted, plus some for dusting
  • 300 ml pot of double cream
  • 170g tub of Total Greek yogurt
  • ½ tsp vanilla paste or seeds from ½ vanilla pod

Preparation steps

  1. Preheat the oven to 180°C/160°C fan/gas 4.
  2. Grease and line a flat baking tray (23 x 32 cm).
  3. Beat the egg whites, lemon juice and a pinch of salt with an electric hand mixer until stiff but not dry.
  4. Add 1 tablespoon of powdered sugar and stir until the mixture thickens again, forming stiff peaks.
  5. Repeat with the remaining sugar, spoon by spoon, until the mixture resembles a thick, shiny shaving cream.
  6. Spread the mixture in the tin, sprinkle with almonds and then bake for 15 minutes or until risen, firm and golden brown.
  7. Allow to cool completely. (It will deflate.)
  8. Simmer the cranberries in the pomegranate juice for 10 minutes until they are soft.
  9. Add sugar and cinnamon and simmer for 5 minutes until a syrup forms.
  10. Taste and add more sugar if necessary.
  11. Stir in arrowroot until juice thickens, then allow to cool.
  12. To assemble, sift a generous amount of powdered sugar over a large piece of parchment and then carefully tip the meringue onto the top.
  13. Remove the mold and baking paper.
  14. With the short end facing you, score a 2cm wide line into the meringue.
  15. Beat all the cream ingredients until thick but not stiff and then spread over the meringue.
  16. Pour about 1/3 of the cranberry sauce on top.
  17. Roll up the roulade, starting with the notched short end and using the paper underneath to help you.
  18. Carefully transfer to a serving plate and serve with the remaining zesty cranberries.
