  • 175g fresh or frozen cranberries
  • 200g jar of currant jelly
  • 50g golden powdered sugar
  • 175g self-raising flour
  • 1 teaspoon Baking powder
  • 200g golden powdered sugar

  • Vanilla pod seeds
  • 200g butter
  • 1 teaspoon Baking powder
  • 500 ml fresh vanilla pudding
  • 100g white chocolate

Preparation steps

  1. Put 100 g cranberries in a saucepan with currant jelly and sugar.
  2. Simmer for 5 minutes, then let cool.
  3. Meanwhile, put a pot of water to boil and butter a 4-quart bowl.
  4. Butter a large sheet of baking paper, place it on a piece of aluminum foil of the same size and fold an edge in the middle.
  5. Mix all the ingredients for the sponge cake, then stir in the remaining cranberries.
  6. Add a third of the cranberry and currant mixture to the bowl, then top with the sponge mixture.
  7. Cover with paper and foil, tie with string and steam with the lid closed for 1½ hours.
  8. To serve, reheat the cranberry mixture and pour over the finished pudding.
  9. Can be prepared up to 2 days in advance and steamed again for 30 minutes or microwaved on high for 5 minutes.
  10. To make the custard, place the chocolate in a microwave-safe bowl, add the custard and heat according to the package instructions. Stir every 30 seconds until the chocolate has melted.
