- 275 ml whole milk
- 50g butter, cut into cubes
- 450g strong white bread flour
- 7 g bag of fast-acting dry yeast
- 50g golden powdered sugar, plus 3 tbsp
- 1 tsp ground cinnamon
- tasteless oil for greasing
- 200g marzipan, chilled
- 1 orange, peeled and juiced
- 100g fresh cranberries
- 100 g dried cranberries, plus 1 tbsp
- 40g pistachios, chopped
- edible gold spray (optional)
- 3 tbsp apricot jam, sifted
- 150g powdered sugar
- Heat the milk in a saucepan until steaming but not boiling.
- Remove from heat and add the butter, stirring to melt, then set aside and allow to cool slightly.
- Meanwhile, combine the flour, yeast, 50g sugar, cinnamon and 1 teaspoon salt in a large bowl or the bowl of a table mixer.
- When the milk is warm, add it to the dry ingredients and mix everything into a sticky dough.
- Transfer to the work surface and knead by hand for 10 minutes or in a mixer for 5 minutes until the dough is smooth and stretchy.
- Place back in a clean, oiled bowl, cover with oiled cling film and leave to rise in a warm place for 1-2 hours until doubled in size.
- Line your largest baking sheet with parchment paper.
- Place the dough on a lightly floured work surface and roll out into a rectangle measuring approximately 30 x 40 cm.
- Rub the marzipan over the surface and sprinkle the orange peel, fresh cranberries, 75g dried cranberries, 25g pistachios and 3 tbsp powdered sugar over it.
- Roll the dough tightly into a sausage shape on one of the longer sides and pinch the dough together on the other end to seal the open edge.
- Using a large, sharp knife, divide the dough sausage first in half, then into quarters, and then cut each quarter into three pieces, leaving you with 12 equal pieces of dough.
- Turn them all cut side up and arrange them in a tree shape on the baking sheet. Use one piece as a log and leave space between each bun to allow it to expand.
- Make sure the pinched edge on the outside of each bun faces the center of the tree, otherwise it may loosen and unravel during baking.
- There should be a roll left over – bake this with you (a treat for the cook!).
- Cover the sheet with a piece or two of oiled plastic wrap and let rise for 30-40 minutes, or until doubled in size and just touching each other.
- Preheat the oven to 180°C/160°C fan/gas 4.
- Bake in the middle of the oven for 20-22 minutes until golden brown.
- While the rolls are baking, heat the apricot jam with 2 teaspoons of water until liquid, then set aside to cool.
- Mix the powdered sugar with enough orange juice to form a thick glaze and pour into a small disposable piping bag or plastic sandwich bag.
- If you want, you can spray the pistachios with gold spray at this point.
- When the rolls are ready, let them cool for 15 minutes and then brush them all over with the apricot glaze.
- Snip the corner of the piping bag and drizzle the icing in random lines over the top of the buns.
- Scatter the remaining pistachios and dried cranberries on top and let the glaze set for 10 minutes before serving.
- Store in an airtight container for up to three days.
