  • 2 tbsp brown crab meat
  • 1 tbsp Sriracha or chili sauce
  • 1 tbsp lemon juice

Preparation steps

  1. Place the butter in a large pot with 225ml water and heat slowly so that the butter melts but the water does not evaporate.
  2. Remove from heat and quickly add the flour. Mix until fully incorporated and releases from pan, then allow to cool to room temperature.
  3. Using a wooden spoon, beat in the eggs one at a time until a smooth, glossy mixture forms and the mixture drips off the spoon after 3 seconds.
  4. Stir in the cheese until well combined, then fold in the chives, shrimp and some spices.
  5. In the meantime, mix the mayonnaise ingredients, season and set aside. Can be prepared a day in advance.
  6. Heat the oil in a deep fryer or large heavy-bottomed pot (no more than half full) to 350°F or until a piece of bread browns in 40 seconds.
  7. Using a tablespoon, scoop out dough by the spoonful and carefully place it directly into the hot oil (you’ll need to cook it in batches so as not to overcrowd the pan).
  8. Fry each portion for 3-4 minutes until golden brown and then drain on paper towels.
  9. Season with sea salt flakes and cayenne pepper.
  10. Serve hot with the mayonnaise.
