Ingredients

  • 500g pack of puff pastry
  • 25g butter
  • 140g leek, washed and cut into thin slices
  • a pinch of saffron threads
  • 250g crab meat (white or brown or a mix of both)
  • small bunch of parsley, coarsely chopped
  • 50g fresh white breadcrumbs
  • 1 zest and juice of 1 lemon
  • 1 egg, beaten

Preparation steps

  1. Preheat the oven to 200°C/180°C fan/gas. 6. Roll out the dough on a lightly floured surface and then cut around a plate to make four 18cm circles. Place in the refrigerator for 10 minutes.
  2. Meanwhile, melt the butter in a frying pan. Cook the leeks for 5 minutes until soft. Soak the saffron in 1 tablespoon boiling water for 2 minutes. Add the saffron and the soaking liquid to the leeks and cook for another minute.
  3. Place the crab meat in a bowl with the parsley, breadcrumbs, lemon zest, lemon juice and some spices. Stir in the leek, then divide the mixture among the four dough circles and spread the filling on one half of the dough.
  4. Brush the edge with egg, then fold the dough over and press the edges together. Brush the pies with egg and bake for 30-35 minutes until golden brown.
  5. Allow to cool then serve warm or at room temperature with additional lemon wedges if desired.
