Crab and corn cakes with chili dip

  • 1 egg
  • 4 tbsp flour
  • 1 small garlic clove, crushed
  • 1 tbsp chopped coriander stems (use the leaves for the main course)
  • 340g can sweetcorn, well drained (I use Green Giant Original)
  • 170g canned white crab meat, well drained and flaked
  • 2 spring onions, finely chopped
  • Sunflower or vegetable oil for frying
  • 4 tbsp sweet chili sauce
  • Juice ½ lime
  • ½ finger-length piece of cucumber, seeds scraped out, pulp finely chopped

Preparation steps

  1. In a food processor, combine the egg, flour, garlic and coriander stalks with a third of the corn. Mix until a smooth paste forms.
  2. In a mixing bowl, combine the paste with the remaining corn, shrimp and half of the green onions and season with salt and pepper.
  3. In another bowl, stir together the dipping sauce ingredients.
  4. Prepare a tray by covering it with paper towels.
  5. Heat 5 cm of oil in a large, heavy pot. Test if the oil is ready by dropping a cube of bread into it – it should brown in 30-40 seconds.
  6. Add tablespoons of the corn mixture to the hot oil and fry, turning occasionally, until golden brown and crispy, 2-3 minutes.
  7. Transfer the fried corn cakes to the prepared baking sheet lined with paper towels to drain excess oil. Keep them warm.
  8. Repeat the frying process with the remaining corn mixture.
  9. Serve the hot crab and corn cakes sprinkled with the remaining green onions. Serve with the dipping sauce for extra flavor.
