  • 2 tsp sunflower oil
  • 1 onion, finely chopped
  • 8 pork sausages, cut into bite-sized pieces
  • 2 cloves of garlic, crushed or finely grated
  • 2 tsp hot smoked paprika powder
  • 2 x 410g cans of baked beans
  • 3 tbsp barbecue sauce
  • 1 kg potatoes, peeled and roughly chopped
  • 50g butter
  • 4 tablespoons of milk
  • 75g grated cheddar
  • 2 tablespoons chopped chives for garnish, optional

Preparation steps

  1. Make the Mashed Potatoes:
    1. Bring a large pot of salted water to a boil over medium-high heat.
    2. Add the chopped potatoes and cook for 15-20 minutes until tender.
    3. Drain the potatoes and return them to the pan.
    4. Air dry the potatoes for a few minutes before mashing them.
    5. Add butter and milk and stir until well combined.
    6. Set aside with the lid closed to keep warm.
  • Preheat the oven to 200°C/180°C/Gas 6.
  • While the potatoes are cooking, heat the oil in a skillet or saucepan over medium-high heat.
  • Fry the onion for 6-8 minutes until soft.
  • Add the sausage pieces and fry for 4 minutes until browned all over.
  • Add the garlic and cook for 1 minute.
  • Stir in the smoked paprika and cook for 1 minute more.
  • Add beans and barbecue sauce.
  • Allow to cook until almost simmering, then remove from heat.
  • Place the sausage and bean mixture in an ovenproof dish or casserole dish (20 x 20 cm).
  • Pour the mashed potatoes over it.
  • Sprinkle the grated cheddar on top.
  • Bake in the oven for 25-30 minutes until bubbles appear around the edges and the cheese is golden brown.
  • Remove from the oven and sprinkle with chives if necessary.
