  • 300g couscous
  • 300 ml hot vegetable or chicken stock
  • 250g bucket of olives and feta cheese in olive oil
  • 1 heaped tablespoon of harissa paste
  • 2 x 200g packs of falafel
  • 290g jarred roasted red peppers, drained and thinly sliced
  • 300g fat-free yogurt
  • Bunch of mint, coarsely chopped

Preparation steps

  3. Drain the olives and feta, reserving some of the oil.
