  • 225g strong white bread flour
  • 1 tsp fast-acting dry yeast
  • 500 g strong white bread flour, plus some flour for kneading and dusting
  • 2 tsp fast-acting dry yeast
  • 2 tsp salt
  • 75 ml natural yogurt
  • Oil, for greasing

Preparation steps

  1. Prepare the starter by mixing flour and yeast in a bowl.
  2. Pour 200ml of warm water into the bowl and mix with a wooden spoon.
  3. Cover the bowl with oiled cling film and leave it in the fridge overnight.
  4. The next day, the dough should look foamy and bubbly and have a sweet yeasty scent.
  5. In a separate bowl, mix together the flour, yeast and salt.
  6. Pour 150ml warm water and the yoghurt into the starter mixture.
  7. Stir until well combined, then add to the bowl with the flour.
  8. Using a spoon, form the mixture into a ball.
  9. Add another 50ml water if the dough feels firm.
  10. Place the dough on a surface dusted with flour.
  11. Press the dough down and stretch it out with the heel of your hand.
  12. Fold the outer edges back over themselves to form a ball again.
  13. Continue kneading the dough for about 10 minutes.
  14. Alternatively, you can knead the dough in a mixer or food processor for about 5 minutes.
  15. Lightly oil a large bowl and pour the dough into it.
  16. Cover the bowl with oiled cling film and let the dough rise in a warm place until it has almost tripled in volume.
  17. Punch down the dough and knead it a few times until smooth.
  18. Lightly oil a large baking tray and shape the dough into a round ball on the tray.
  19. Cover the dough with oiled plastic wrap and let it double in size, about 1 hour.
  20. Preheat the oven to 230°C/210°C fan/gas 8.
  21. Place a roasting pan on the bottom rack of the oven and fill it halfway with boiling water.
  22. Leave in the oven for 10 minutes to produce steam.
  23. When the dough has spread, tuck the ends down to form a nice ball.
  24. Make a few cuts across the bread with a sharp knife and dust with flour.
  25. Place the baking sheet on the top rack of the oven and bake for 20 minutes.
  26. Reduce the heat to 220°C/200°C fan/gas 7 and bake for a further 25 minutes.
  27. Tap the bottom of the bread – it should sound hollow.
  28. If necessary, return to the oven for another 10 minutes.
  29. Let the loaf cool on a wire rack.
  30. Enjoy with soup, as a sandwich or lightly roasted with butter and jam.
