  19. Cover the dough with oiled plastic wrap and let it double in size, about 1 hour.
  20. Preheat the oven to 230°C/210°C fan/gas 8.
  21. Place a roasting pan on the bottom rack of the oven and fill it halfway with boiling water.
  22. Leave in the oven for 10 minutes to produce steam.
  23. When the dough has spread, tuck the ends down to form a nice ball.
  24. Make a few cuts across the bread with a sharp knife and dust with flour.
  25. Place the baking sheet on the top rack of the oven and bake for 20 minutes.
  26. Reduce the heat to 220°C/200°C fan/gas 7 and bake for a further 25 minutes.
  27. Tap the bottom of the bread – it should sound hollow.
  28. If necessary, return to the oven for another 10 minutes.
  29. Let the loaf cool on a wire rack.
