  • 5 medium eggs
  • 200g granulated sugar
  • 100 ml vegetable oil
  • 175g plain flour
  • 2 tbsp cocoa powder
  • 1 teaspoon Baking powder
  • ½ tsp cinnamon
  • ½ tsp spice mixture
  • ½ tsp ground ginger
  • 5 apples, peeled, cored and diced, approx. 600g
  • 1 teaspoon each of powdered sugar and ground cinnamon for dusting

  1. Preheat the oven to 180°C/160°C fan/gas 4.
  2. Line a 23cm loose-bottomed cake tin with baking paper.
