Ingredients

  • 50g butter, plus a little butter for greasing
  • 1 small onion, finely chopped
  • 225g fine corn flour
  • 140g plain flour
  • 1 tablespoon of sugar
  • 2 teaspoons of baking soda
  • 1½ tsp salt
  • 2 x 10 ounce cartons buttermilk (or the same amount of semi-skimmed milk with a squeeze of lemon juice)
  • 2 eggs

Preparation steps

  1. Preheat the oven to 230°C/fan 210°C/gas 8.
  2. Butter a 9-inch cake pan or ovenproof skillet.
  3. Melt the butter in a separate pan.
  4. Add the onion and cook over low heat until soft, 5 minutes.
  5. Meanwhile, add all dry ingredients to a large mixing bowl.
  6. Mix buttermilk and eggs in a separate bowl.
  7. Stir in buttered onions.
  8. Pour the buttermilk and onion mixture over the dry ingredients.
  9. Mix until everything is well mixed and a dough forms.
  10. Pour the batter into the cake pan or frying pan.
  11. Smooth the top of the dough with a knife.
  12. Bake for 25 minutes until golden brown.
  13. Insert a skewer into the center to check if it comes out clean.
  14. Let the cornbread cool in the pan for 10 minutes.
  15. Turn the cornbread out of the tin and cut into wedges.
  16. Serve immediately or store in an airtight container for up to 2 days.
  17. Alternatively, you can freeze the cornbread for up to 1 month.
