Ingredients

  • 25g butter
  • 1 small onion, finely chopped
  • 1 small garlic clove, crushed
  • 1 stalk celery, chopped
  • 1 small green pepper, seeded and diced
  • 1 large potato, diced
  • 600 ml semi-skimmed milk
  • 300 ml vegetable broth
  • 300g can sweetcorn, drained and rinsed
  • a few drops of Tabasco sauce
  • 2 tbsp chopped fresh chives for serving
  • 2 thick slices of bread, crust removed and diced
  • 2 garlic cloves, crushed
  • 2 tbsp olive oil

Preparation steps

  1. Heat butter in a pan
  2. Add onion, garlic, celery, peppers and potatoes
  3. Let cook for 5 minutes
  4. Stir in milk and broth
  5. Bring to a boil
  6. Let simmer for 15 minutes
  7. Stir in corn
  8. Let cook for 3 minutes
  9. Add Tabasco and spices
  10. For the croutons, place the bread in a bowl
  11. Add garlic, oil and a little salt
  12. Stir well to coat the bread
  13. Heat a non-stick pan
  14. Gently bake bread cubes until golden brown and crispy
  15. Serve the soup garnished with chives
  16. Place the croutons on top

  3. Puree the soup with a hand blender until smooth. Alternatively, you can put the soup in a blender and blend in batches until smooth. Return the soup to the pot.
  4. Add the sweetcorn to the pot and cook for another 5 minutes.
  5. Depending on your taste, stir in a few drops of Tabasco sauce.
  6. In a frying pan, heat the olive oil over medium heat. Add the garlic and cook until fragrant, 1 minute. Add the bread cubes and toss to coat with the garlic oil. Cook for 5 minutes until the croutons are golden brown and crispy.
