Ingredients

  • 8-10 corn tortillas
  • 3 tbsp vegetable oil
  • 100g small peeled shrimps
  • Juice 1 lime
  • ½ mango, peeled, seeded and finely diced

  • Set aside a handful of coriander, finely chopped, and a few whole leaves

  2. Using a 6cm cookie cutter, cut circles out of the tortillas.
  3. Heat the tortilla circles in the microwave for 5 seconds.
  4. Press the tortilla circles into a mini muffin tin.
  5. Brush the tortilla circles with oil.
  6. Bake the tortilla circles for 8-10 minutes or until golden brown and crispy.
  7. Remove the tortilla cups from the oven and allow them to cool completely.
  8. Cut the shrimp into small pieces.
  9. Marinate the shrimp in lime juice for 5 minutes.
  10. In a bowl, mix shrimp, lime juice, mango, red onion, chili and coriander.
  11. Season the mixture with salt and pepper and mix well.
  12. Just before serving, fill the corn cups with the shrimp mixture.
  13. Top the filled cups with coriander leaves.
