- 100 g butter, well softened
- 100g light muscovado sugar
- 100g self-raising flour

Sift 175 g of powdered sugar into 100 g of very soft sugar

- Bake for 18-20 minutes until light golden and springy.
- Let cool in the tin for a few minutes, then remove the cakes and let them cool completely on a wire rack.
- Place the mascarpone, another 3 teaspoons of coffee and the sugar in a large bowl and stir to combine.
- Spread a dollop of coffee cream on the surface of each cake and finish with a walnut half.
- The cakes taste best when covered with ice cream shortly before eating. So if you’re making them in advance, whip up the mascarpone mixture, store it in the fridge, whisk it again, and spoon it onto the cakes just before serving.
- Without frosting, cakes will keep in an airtight container for up to 2 days.
