Ingredients

  • 100 g butter, well softened
  • 100g light muscovado sugar
  • 100g self-raising flour
  • 2 large eggs
  • 2 teaspoons of instant coffee, mixed with 100 ml of boiling water and then cooled
  • 25g walnut halves, chopped, plus 12 more for the top
  • 200 ml cup of mascarpone (this is available with the soft cheeses)
  • 2 tbsp light muscovado sugar

  2. Line a 12-hole bun tin with fairy cake liners.
  3. Mix butter, sugar, flour and eggs with 4 teaspoons of coffee and a pinch of salt until creamy.
  4. Stir in the chopped walnuts.
  5. Pour the mixture into the ramekins (start by adding 1 heaping teaspoon to each and then top up again – so they should all be the same size).
  6. Bake for 18-20 minutes until light golden and springy.
  7. Let cool in the tin for a few minutes, then remove the cakes and let them cool completely on a wire rack.
  8. Place the mascarpone, another 3 teaspoons of coffee and the sugar in a large bowl and stir to combine.
  9. Spread a dollop of coffee cream on the surface of each cake and finish with a walnut half.
  10. The cakes taste best when covered with ice cream shortly before eating. So if you’re making them in advance, whip up the mascarpone mixture, store it in the fridge, whisk it again, and spoon it onto the cakes just before serving.
  11. Without frosting, cakes will keep in an airtight container for up to 2 days.
