  • 100 ml strong black coffee (made from 2 tbsp coffee granules), cooled

  • 250g golden powdered sugar
  • ½ tsp baking powder
  • 4 eggs
  • 1 tsp vanilla extract
  • 85g walnuts, 2 tbsp coarsely chopped, the rest finely chopped
  • 100g icing sugar, sifted, plus a little sugar for dusting
  • 150 ml double cream
  • 100 g mascarpone, at room temperature

Preparation steps

  1. Preheat the oven to 180°C/160°C fan/gas 4.
  2. Grease 2 round cake tins (20 cm) with butter and line them with baking paper. Set aside 1 tablespoon of coffee for the filling.
  3. Beat butter, flour, sugar, baking powder, eggs, vanilla and half of the remaining coffee in a large bowl with an electric whisk until lumpy.
  4. Fold in the finely chopped walnuts, then divide them into the molds and distribute roughly.
  5. Sprinkle the roughly chopped walnuts over one of the cakes.
  6. Bake the cakes for 25-30 minutes, until golden brown and risen and a skewer inserted comes out clean.
  7. Drizzle the cake with the remaining coffee.
  8. Allow the cakes to cool in the tins.
  9. In the meantime, prepare the filling: Mix the powdered sugar, cream and mascarpone, then fold in the reserved 2 tablespoons of coffee.
  10. Spread on the plain cake, then cover with the walnut-topped cake and dust with a little powdered sugar.
