  • 2 large free range eggs
  • 4 slices streaky bacon
  • 50 ml olive oil
  • 20 ml apple cider vinegar
  • 1 heaped tbsp Dijon mustard
  • 2 Little Gem salads
  • ½ large ripe avocado, scooped into pieces
  • 3 tomatoes, quartered
  • 1 medium-cooked chicken breast, approx. 150 g, sliced

Preparation steps

  1. Bring a pot of salted water to the boil.
  2. Add the eggs and simmer for 7 minutes.
  3. Remove with a slotted spoon and place in a bowl of ice-cold water.
  4. Once cooled, carefully peel the shells off the eggs and set aside.
  5. Place the bacon on a foil-lined baking sheet.
  6. Place under the grill on high and cook for 4-5 minutes on each side until super crispy.
  7. Allow to cool slightly.
  8. Mix olive oil, vinegar and mustard with a good pinch of sugar until you get a thick, shiny mixture.
  9. Season generously.
  10. Remove the outer leaves of the lettuces and cut each in half lengthwise.
  11. Divide between two deep bowls.
  12. Add avocado, tomatoes and chicken.
  13. Top with crispy bacon and halved soft-boiled eggs.
  14. Drizzle the vinaigrette over it and grind some black pepper over it.
