Ingredients
- 2 large free range eggs
- 4 slices streaky bacon
- 50 ml olive oil
- 20 ml apple cider vinegar
- 1 heaped tbsp Dijon mustard
- 2 Little Gem salads
- ½ large ripe avocado, scooped into pieces
- 3 tomatoes, quartered
- 1 medium-cooked chicken breast, approx. 150 g, sliced
Preparation steps
- Bring a pot of salted water to the boil.
- Add the eggs and simmer for 7 minutes.
- Remove with a slotted spoon and place in a bowl of ice-cold water.
- Once cooled, carefully peel the shells off the eggs and set aside.
- Place the bacon on a foil-lined baking sheet.
- Place under the grill on high and cook for 4-5 minutes on each side until super crispy.
- Allow to cool slightly.
- Mix olive oil, vinegar and mustard with a good pinch of sugar until you get a thick, shiny mixture.
- Season generously.
- Remove the outer leaves of the lettuces and cut each in half lengthwise.
- Divide between two deep bowls.
- Add avocado, tomatoes and chicken.
- Top with crispy bacon and halved soft-boiled eggs.
- Drizzle the vinaigrette over it and grind some black pepper over it.
